The Brig o’ Doon House Hotel, an iconic and beautifully refurbished venue in Alloway, Ayrshire, is thrilled to announce an exciting opportunity for a talented and ambitious Junior Sous Chef. This is your chance to be a foundational part of our culinary team, especially with the recent highly anticipated launch of our new flagship restaurant, Tales.

Inspired by the rich storytelling heritage of Robert Burns, our new restaurant, Tales, offers an exceptional dining experience with a focus on seasonal Scottish cuisine and breathtaking views over the River Doon. This is more than just a job; it’s an opportunity to contribute to a fresh narrative in Ayrshire’s vibrant food scene.

As Junior Sous Chef, you will work hand-in-hand with our Head Chef and Sous Chefs, contributing significantly to the smooth running and culinary excellence of our kitchen, with a particular focus on the exciting new Tales restaurant. This role is ideal for a dedicated Chef de Partie or Senior Chef de Partie ready to take the next step in their career.

Key Responsibilities:

  • Assist in the daily management of kitchen sections, ensuring smooth service and high standards
  • Prepare and cook dishes to specification, maintaining consistent quality and presentation
  • Uphold impeccable hygiene standards and adhere to all food safety regulations
  • Support in training and mentoring junior team members, fostering a positive work environment
  • Assist with stock rotation, ordering, and minimising waste

What We’re Looking For:

  • Proven experience as a Chef de Partie or similar role in a quality restaurant or hotel environment
  • A genuine passion for food, with a keen interest in Scottish produce and innovative cooking techniques
  • Strong organisational skills and the ability to work effectively under pressure
  • A proactive attitude and a willingness to learn and develop
  • Excellent communication skills and a team player mentality
  • Reliable, punctual, and committed to high standards
  • Flexibility to work various shifts, including evenings and weekends
